Cherry Tomato Jam
Makes 1 jar
1 lb (or 3 cups) cherry or grape tomatoes
1 cup sugar
½ cup water
Combine all ingredients in a medium saucepan and being to a boil. Immediately lower to a simmer and cook for 35 minutes until tomatoes have completely burst and a think jam is formed. Strain through the holes of a colander and push the mixture through the holes with the back of a spoon. Discard the peels that remain in the colander. Place mixture back into the saucepan and simmer once more for 5 minutes until completely thick and jam-like consistency. Let cool and store in a canning jar.
